Aloo Ki Khatti Tarkari

250 gms – potatoes, boiled, mashed roughly
1 tbsp – vegetable oil
Asafoetida, a pinch
1 – ginger, one inch piece, julienned
1/2 tsp – turmeric powder
1 tsp – coriander powder
1 tsp – cumin powder
1cups – tomato puree, fresh
Salt to taste
2 – green chillies
3 – dry red chillies
Direction
In a pan heat the oil.
Add asafoetida, ginger, turmeric powder, coriander powder, and cumin powder.
Sauté for a while, mixing well.
Add the potatoes and sauté for a further minute.
Add the tomato puree, salt, and green chillies, stir well.
Cook for a few minutes.
