Amboli

3 cups rice flour
3 tsp oil
salt to taste
For Sweet Coconut Milk:
2 cups thick coconut milk
3/4 cup brown sugar or jaggery
a pinch nutmeg powder –
For Grated Coconut Milk:
2 cups grated coconut
1/2 cup powdered jaggery
1 tsp cardamom powder
Directions
Combine all the top 3 ingredients and add enough water to make a thin batter.
Heat a thick non stick dosa pan and brush it with oil.
Take a ladleful of batter and pour it all over the pan from a height of about 15 cm from the pan to form a thin lacy disc, full of big holes.
The pan should be quite hot.
Allow the batter to cook and set.
Fold the pancake into a triangle and remove from the pan.
Serve with sweet coconut milk or grated coconut mix.
For Sweet Coconut Milk:
Dissolve sugar or jaggery in coconut milk and add the nutmeg.
For Grated Coconut Milk:
Combine all the ingredients together.
