Brinjal Curry

1/4 kg – brinjal
6 – green chillies
1 tsp – chana dal
1 tsp – urad dal
1/2 tsp – jeera
1 tsp – mustard seeds
pinch – hing
1/2 tsp – turmaric
3 tbsp – oil
1/2 – fresh coconut
1 tsp – ginger paste
salt as per taste
Directions
In a pan heat oil, fry all the seeds
Once done, add the brinjal pieces and turmeric.
Mix well and cover with a lid.
Cook on a low heat until brinjal becomes tender.
With the coconut, green chillies and ginger make a paste
Add this paste to the brinjal pieces
Add salt and mix well
Cook for 5 more minutes
