Brinjal Raitha

1 – big violet brinjal or 4-5 medium size ones
2 – cups fresh curd
1 – medium onion, finely chopped
1 – medium tomato, finely chopped
3 – green chillies finely chopped
a few finely chopped coriander leaves for garnishing
2 tsp – mustard seeds
2 tsp – oil for frying
salt to taste
Directions
Pierce and roast the brinjal on skewers over open flame on the gas stove.
Once done, scrap the skin of the brinjal and get the pulp now soft and cooked.
Mash the pulp with a spoon and add this to the fresh curd.
Heat the oil for frying and add the mustard seeds.
Once they splutter, remove from the heat and pour the seeds over the curds and brinjal.
Add chopped onion, tomatoes and green chillies.
