Brinjal Tomato kichadi

1/2 kg – brinjal (egg plant)
1/2 kg – tomato ripe
4 – green chillies
1 – onion, big
Curry leaves, a few
Coriander leaves, a few
Mustard seeds
1/2 tsp – asafoetida powder
2 tsp – oil
Salt to taste
Directions
Wash and cut all vegetables and onion
In a pan heat some salted water.
Cook all the vegetables in the pan. When done drain.
Heat a wok, add oil, mustard seeds and curry leaves to sputter
Add hing and the boiled vegetables.
In a food processor blend to a medium consistency.
Sprinkle with coriander leaves
