Coimbatore tamarind kozhambu

3 – brinjal
3 – onion
3 – tomato
6 tsp – tamarind juice thick
A pinch turmeric
Salt to taste
2 tsp – oil
For garnish:
1/4 tsp – mustard
1/2 tsp – methi seeds
A little oil
To grind:
6 – small onion
2 tsp – coconut
6 – cloves garlic
6 – red chilli
1 tsp – cander seeds
1/2 tsp – cummin seeds
2 tsp – dal or channa dal
Coriander,1 small bunch
Directions
Fry all the ingredients to grind and make a smooth paste.
Heat oil, add mustard and methi seeds. Stir well.
Add brinjal, tomato and onion and fry for a few minutes.
Add tamarind paste, salt, turmeric
Add 2 cups of water and allow to boil for 10 minutes.
Add the paste and simmer for 7-8 minutes
Sprinkle with coriander leaves
