Cucumber chutney

200g – cucumber with yellow skin (curry variety)
Salt
1/2 tbsp – oil
5 – green chilli
1/2 tsp – jeera
5 – peeled garlic cloves
1/4 tsp – mustard seeds
1 tsp – tamarind paste
Directions
Peel the cucumber and cut into half inch pieces. Place to one side.
With a needle prick the chillies.
In a pan on low heat, heat oil (1/4 tbsp), add cucumber pieces and fry for 3 minutes and remove.
In the same pan, add remaining oil, mustard seeds, jeera, garlic cloves.
Fry until seeds start to crackle, add green chilli, salt and fry for 2 minutes.
Remove from heat and allow to cool.
Grind this with tamarind paste and half the quantity of fried cucumber pieces into a coarse paste.
Now add the rest of the cucumber and mixer in a mixer for a few seconds.
