Eggplant masala

1/4 kg – Brinjal/eggplant
1 – Onion
2 – Tomato
1/2 cup – Groundnuts
1/2 tbsp – Cumin seeds
1 tbsp – Sesame seeds
1 tbsp – Red chilli powder
1 tbsp – Coriander powder
1 tsp – Turmeric powder
Asafoetida, a pinch
Salt to taste
Oil for frying
Directions
Cut brinjal into four pieces, just make a cut don`t cut fully.
Immediately after cutting soak in water.
Fry groundnuts, sesame seeds, cumin seeds and powder it.
Grind onions and tomatoes and make a paste.
Keep other ingredients ready.
Heat oil in a pan splutter cumin seeds, add asafoetida, then add brinjals and fry until it becomes soft.
Now add the ground onion and tomato paste. Stirring well.
Add red chilli powder, coriander powder, and finally groundnut paste.
If required add little salt.
