Gajrella

1 litre of milk
1/2 kg carrots peeled and grated
5-6 green cardamom (Chhoti Ilaichi)
2/3 cup rice
2/3 cup sugar (more according to taste)
a few drops of Kewra essence
Method
In a pot on a low heat boil the milk. Add the ilaichi seeds and the rice. Cook until rice becomes soft and the milk has thickened.
Add the carrots and sugar and cook a little more until the water from the sugar has evaporated and the carrots have become soft.
With a hand mixer lightly mash the contents.
Just before removing from heat add the few drops of kewra essence.
