Imli Chutney

300 gms. Tamarind (Imli)
2 cups sugar
Salt according to taste
1/2 tsp chilli (Lal Mirch) powder
3/4 inch piece of ginger (Adrak) or Dried ginger (Sounth)
Method
Soak the imli in lukewarm water until it becomes soft.
Rub well to remove the seeds.
Into a container strain the juices out.
On a medium heat bring to a boil.
Then add sugar, salt and chilli powder, lower the heat while stirring continuously until it starts to becomes thick.
A small piece of ginger can be added and later removed for an extra flavour.
When desired consistency achieved remove from heat and allow to cool before storing.
