1 cup maida
1/2 cup rice flour
2 cup water
21/2 cup sugar
1 tsp. soda
1/2 tsp. cream of tartar
5 green cardamom (Chhoti Ilaichi)
2 tsp. Rose water
Saffron (Zafran)
Yellow/orange food colour
Oil/ghee for frying
Method
In a container mix the madia, rice flour, soda and water and mix well. Keep in a warm place over night.
Mix sugar, water, ilaichi saffron cream of tartar and cook on a low heat so that it becomes thick syrup.
Using an icing bag put in the mixture from the container.
Deep fry the mixture in the curls. Fry till light brown and pour into the syrup.
Remove and let the excess syrup drain out.
