Khoya Pooranam Modak

For the Covering:
1 cup – grated khoya
1/2 cup – powdered sugar
a few strands of saffron dissolved in milk
For the Pooran:
1/2 cup – grated coconut
2 tbsp – powdered jaggery
a few drops of ghee
2 tbsp – water
1/2 tsp – cardamom powder
Directions
For the Coconut Pooran:
Melt gud with little water and filter to remove dust and allow it to boil until thread consistency, add ghee and add grated coconut.
Stir well allowing it becomes thick, keep aside and allow it to cool.
Once cool add cardamom powder.
For the Pooran Modak:
Combine the mava and powdered sugar in a heavy bottomed pan and cook on a low flame, while stirring continuously until the sugar has dissolved and the moisture has evaporated .
Remove this from the heat.
Add the saffron and allow to cool.
Divide the mixture into two equal lemon sized balls.
Fill some pooran on each part and give the shape of ladoo.
