Lobia ki curry

1 cups – lobia, soaked overnight
2 large onions, chopped
4 medium tomatoes, chopped
2-3 green chillies
2 tbsp ginger and garlic paste
1 tsp haldi/turmeric powder
2 tsp mirchi/chilli powder
2 tsp dhaniya/coriander powder
1 tsp garam masala
2 tbsp dessicated coconut
2 tbsp yogurt
coriander leaves for garnishing
3-4 tbsp oil
Salt to taste
Directions
In a pressure cooker heat oil and sauté the onions until they become translutant.
Then add ginger and garlic paste. Stir well. Keep cooking until light brown in colour.
Add tomatoes and stir.
When the tomatoes are soft, add the salt, haldi, mirchi, green chillies, some coriander leaves, garam masala, coconut and mix well.
Cook until the oil begins to separate.
Now add yogurt or curd and stir and leave aside for 5 minutes.
Stir every few minutes.
Add lobia mixing well; add water until lobia is covered.
Now pressure cook up to 4 whistles.
