Lobia Sundal

250 g – lobia (soaked for 3 to 4 hrs)
1 – onion, chopped fine
3 – green chillies, chopped fine
8 – garlic cloves, peeled
1/2 tsp – mustard seeds
10 – curry leaves
1/2 tbsp – chopped coriander
1/2 tsp – jeera
1 – red chilli
1/2 tbsp – oil
salt
Directions
In a pressure cooker cook the soaked lobia up to 3 whistles.
Drain the beans and keep to one side.
Heat oil, add mustard seeds, cumin, red chilli, crushed garlic and curry leaves, and fry.
Once the mustard seeds splutter add the green chillies and onions, keep frying until the onions become pink.
Add boiled lobia, mix well, sprinkle chopped coriander leaves in, mix well.
Cook for a further few minutes.
