Modak

1 cups rice flour, roasted
2- 3 drops yellow colour
1/2 cup hot milk diluted with 1/4th cup water
3 tsp oil
1/4th cup coconut
2 cups sugar, powdered
1 tsp cardamom powder
1/2 cup khoya
Directions
Make dough of rice flour and diluted milk without lumps.
While kneading mix yellow colour; make balls and keep aside.
Mix grated coconut, sugar, cardamom powder in a heavy-bottomed pan.
Add khoya and stir on a low heat.
Allow to cool.
Stuff the prepared coconut khoya mixture in the balls.
Fold in the edges so that it is tapering at the centre.
Steam-cook the modaks in a cooker for about 5 minutes or until done.
Sprinkle with chopped pistachio.
Allow to cool.
