Protein rich val beans

400 g – val beans (beans removed from pods)
salt
1 tbsp – oil
1 tsp – mustard seeds
5 – peeled and crushed garlic
10 – curry patta leaves
1 – small onion, chopped fine
4 – green chilli, chopped fine
1 – red chilli
1 tbsp – finely grated fresh coconut or desiccated coconut powder
2 tsp – chopped coriander leaves
Directions
In a pressure cooker, cook val beans along with salt in a cooker up to 4 whistles.
Drain the beans and keep to one side.
In a pan heat oil, add mustard seeds, red chilli, garlic and curry leaves.
Fry until the seeds start to splutter.
Then add green chilli and onion and fry until the onion turn pink & soft.
Stir in the boiled beans mixing well, cover and simmer for 2-3 minutes
Remove lid, sprinkle coconut powder and chopped coriander and mix well.
