Raw mango rice

3 cups – cooked rice
1 cup – finely chopped raw mango
1 tsp – mustard seeds
1 tsp – chana dal
1 tsp – split moong dal
8 – curry leaves
2 tsp – finely chopped coriander leaves
1 tsp – finely chopped ginger
3 – dry red chillies
1 tsp – turmeric
A pinch of asafoetida
1 tbsp – roasted cashews
2 tsp – oil
Salt to taste
Directions
In a kadai heat oil
Add mustard seeds and allow it to splutter.
Add ginger, channa dal, moong dhal, dry red chillies, asafoetida, turmeric powder, and curry leaves.
Sauté for a few minutes.
Add the chopped raw mango, required amount of salt and sauté for another few minutes.
Remove from heat and add chopped coriander leaves and roasted cashews.
Mix this with rice
