Sago vadam

500 g – sago
125 g – green chillies (paste)
50 gm – salt
Juice of 2 lemon
3 ltr – water
Directions
Soak sago in a litre of water for 2 hours.
In a pan boil the remaining water.
Add soaked sago, stirring constantly.
It will thicken to form a paste.
Remove from heat. Add lemon juice, green chilli paste and salt and mix well.
Spread out a clean plastic sheet on the terrace.
Drop spoonfuls of batter and pat into round discs.
Dry in the sun for two days until you are able to peel off the vadams with ease.
