Sambhar

tuvar dal – 2 cups (400 – 450 gms)
onion – 1 big
tomato – 1 big
tarmarind – small lemon size
vegetables – drumstick, brinjal or drumstick, carrot, potatoes or ladies finger or raw mango
chilli powder – 2 tsp
sambhar powder – 5 to 6 tsp
dhania powder – 1 tsp
tumeric powder – 1/2 tsp
nutmeg powder – 1/2 tsp
mustard seeds – 1/2 tsp
cuminseeds – 1/4 tsp
dry red chillies – 4
curry leaves – 1 sprig
coriander (cilantro) leaves, finely chopped – 2 tbsp
ghee
oil
salt to taste
Directions
Cook the tuvar dal with twice the amount of water, little salt, a pinch of turmeric and a spoon ghee.
Soak the tarmarind in little water and take juice.
In a pan heat oil, add finely chopped onions, and fry, add finely chopped tomatoes and fry till they are tender and little mushy.
Then add the vegetables accordingly.
When you feel the veggies are cooked fine then add the sambhar powder, chilli powder, dhania powder, and turmeric powder accordingly and fry for a while.
Add the cooked tuvar dal with little water
Leave for 4-5 minutes and add the tamarind juice.
Bring to a good boil.
In a separate pan, add little ghee, splutter mustard, cumin, red chillies and curry leaves and add in the cooked sambhar.
add the chopped coriander leaves.
