Simple aloo tomato curry

250gms – potato, peeled and cut into 1to1&1/2-inch cubes
2 – onions, medium-sized, cut into small pieces
100gms – tomatoes, chopped fine
3 – green chillies, cut into small pieces
Turmeric powder, a pinch
Salt
2 tbsp – oil
1/2 tbsp – coriander powder (dry fried crushed roughly along with garlic)
8 – peeled garlic cloves
3/4 tsp – red chilli powder
2 tsp – chopped coriander
In a pan on a medium heat add the oil then the chilli pieces, turmeric powder and salt.
Fry until the onions have become soft.
Add the potatoes, red chilli powder, a little water and salt.
Allow to cook until the potatoes become soft ten add the tomatoes pieces.
Lower the heat and simmer for a few minutes so the tomatoes become soft and blend in with the potatoes.
Add dhania powder and crushed garlic, stir well; cover and cook for a further few minutes.
