Sorrel sepals jam

600 g – sepals from sorrel flowers
600 g – sugar
1/2 tsp – citric acid
1/4 tsp – fruit essence
Directions
Wash and drain the sepals.
In a non stick pan simmer in little water, stirring continuously until it becomes sticky soft lump
Add sugar & again cook under sim stirring continuously, until sugar & sepal mass blend well together.
Continue stirring until the whole mass leaves the sides of pan.
Mixing well add citric acid and fruit essence, keep on heat for a few seconds then remove.
Preserve in a sterilised bottle & it keeps for 6 months.
