Tomato Rice

1 1/2 cups rice washed and drained
4 tbsp ghee or oil
2 tsp black gram dal
1 tsp mustard seeds
3/4 tsp fenugreek
2 tbsp pea nuts
a few curry leaves
1/2 cup onion chopped finely
1 tsp chilli powder
1 tsp coriander powder
1/2 tomato puree
3 cups water –
2 tbsp coriander leaves, chopped
salt to taste
Directions
In a pan heat ghee or oil.
Add mustard seeds.
Allow to splutter, add black gram dal, fenugreek and pea nuts.
Once they turn brown, add curry leaves and onion.
When the onion is light brown, add chilli and coriander powders.
Add tomato puree, water, salt and rice.
Allow contents begin to boil, cover the pan and lower the heat.
Let the rice simmer gently until all the water is absorbed and rice is cooked.
