Val beans sundal

400g – val beans (anapa ginjalu)
1 – medium onion, chopped fine
5 – green chillies, chopped fine
1 – red chilli, broken into pieces
1/2 tsp – cumin
6 – peeled & crushed garlic cloves
8 – curry leaves
2 tsp – chopped coriander leaves
1&1/2 tbsp – desiccated coconut powder
Salt
1 tbsp – oil
1/4 tsp – mustard seeds
1 tsp – urad dal (split)
Directions
In a pan boil the beans with salt until they become tender. Drain and keep to one side.
In pan heat oil, add mustard seeds, urad dal, cumin, garlic, and curry leaves and red chilli.
Stir and fry until the seeds splutter and dal changes colour to light brown.
Add onions, green chillies and fry until onion becomes soft.
Add the boiled beans, mix well, cover and cook for 4 minutes.
Sprinkle coriander leaves and desiccated coconut powder, mix well then remove from heat.
